Bluenose Parcels and Mango Salsa

Ingrediants:

  • 4 pieces bluenose fillet.
  • 4 tablespoons soy sauce.
  • 1 lemon, sliced.
  • Butter.
  • Lemon-pepper seasoning.
  • 1 mango, fresh and diced.
  • ½ red onion, chopped.
  • 1 tomato, diced.
  • Handful fresh coriander, finely chopped.
  • Dash lemon juice.

Directions:

  • Make four parcels by laying fish pieces on double layers of tinfoil.
  • Sprinkle fish with lemon-pepper seasoning then drizzle over soy sauce.
  • Add a knob of butter and lay over several slices of lemon.
  • Wrap tinfoil to seal in fish.
  • Place on barbecue hotplate over a medium heat.
  • Cook 10-15 minutes.
  • While fish is cooking:.
  • Combine chopped mango, onion, tomato and coriander.
  • Add salt and pepper, to taste, and a dash of lemon juice.
  • Stir well.
  • Unwrap fish parcels, plate fish and top with salsa.
  • Serve on a bed of hot rice.

Hapuku (groper) bass and Bluenose These three popular recreational species are quite often incorrectly lumped together, under the heading ‘hapuku’.
When the angler in your household says he is heading out ‘’puka fishing’ he generally means he is targeting all three species. They all live, as a rule, in water 100 metres-plus deep with bass and bluenose in particular being cellar dwellers.
All three have similar eating qualities. Their flesh is firm and white, and as a group of species they are much sought after in the eating stakes.
