Baked Quail

Ingrediants:

  • 12-18 quail.
  • 1 medium onion, chopped.
  • 2 teaspoons melted butter or margarine.
  • Salt and pepper.
  • 1 can cream of celery soup - undiluted.
  • ½ teaspoon oregano.
  • 1 can mushrooms, drained.
  • ½ teaspoon rosemary.
  • ½ cup white wine.
  • 1 teaspoon soy sauce.
  • 1 cup sour cream.
  • Boil in the bag rice.

Directions:

  • Arrange quail in a large baking dish - do not crowd.
  • Sauté onion in butter until translucent.
  • Add remaining ingredients, except sour cream and rice.
  • Pour over quail and cover dish.
  • Bake at 160°C for 1 hour, turning quail occasionally.
  • Add sour cream (optional) and stir into sauce.
  • Leave uncovered and bake an additional 20 minutes.
  • Serve on a bed of rice, spoon sauce over rice.
 

 

Quail
Quail We have two species of quail in New Zealand, the bobwhite quail and the California quail, with the latter the most common.
California quail were introduced to Nelson in 1865 and after a stuttering start they flourished and spread throughout New Zealand. Populations of quail became so large that thousands of birds were canned and exported to England. They are powerful short-distance fliers that can glide for long stretches. They are more common in drier areas and prefer scrub, pine trees and riverbed vegetation.
