Maomao in Lime Sauce

Ingrediants:

  • 4 maomao fillets.
  • Olive oil for frying.
  • Juice of 1 lime or lime cordial equivalent.
  • 100mls cream.
  • ¼ cup fresh coriander.
  • 50mls fish sauce.
  • ½ chilli, chopped.
  • 1 banana, chopped.

Directions:

  • Lightly season the fillets and pan fry both sides in olive oil.
  • Remove from the pan.
  • Add lime juice, cream, coriander, fish sauce and the chilli.
  • Season, to taste, with a little salt and pepper and reduce.
  • Add the banana to the sauce.
  • Place the fish fillets back in the sauce to warm through.
  • On each plate create a loose-leaf salad including finely-sliced red onion.
  • Add some Pacific fruits such as pawpaw, mango or rock melon.
  • Place the fish on top and pour over the sauce.
 

 

Kahawai

Kahawai

Known in more recent times as ‘the people’s fish’, kahawai is a species that European New Zealanders, until recently, treated with some disdain.

“I don’t eat bait!” was for many years a common call as the kahawai was kept for just that – as a lure to catch more popular recreational species. But like gurnard and trevally, kahawai is seen more commonly on our tables and is less often destined for the bait freezer.
