Baked Kahawai

Ingrediants:

  • 4 large squares of tinfoil.
  • 1 whole 1.5-kilogram kahawai.
  • 1 lemon, cut into 12 slices.
  • 2 capsicums, diced.
  • ½ cup olive oil.
  • 100 grams butter.
  • 1 garlic clove, crushed.
  • 1 large onion, sliced.
  • Cracked pepper.
  • Sea salt.
  • 4 spring onions, sliced.
  • 1 celery stalk, finely sliced.

Directions:

  • Scale and fillet the kahawai, keeping the skin and removing the bones.
  • Trim any dark red flesh from the fillet.
  • Cut each fillet in half.
  • Heat olive oil and a knob of butter in a large cast-iron frying pan.
  • When hot and shimmering, add the kahawai fillets.
  • Cook skin side down for about 1 minute.
  • Onto each square of foil place sliced onion and garlic.
  • Then place a fillet of seared kahawai.
  • Top with capsicum, spring onions, and celery.
  • Season with cracked pepper and sea salt.
  • Finish with a layer of sliced lemons, a knob of butter and olive oil.
  • Form into enclosed parcels and bake for 25 minutes at 230°C.
  • Serve in the foil parcel straight out of the oven.
 

 

Kahawai

Kahawai

Known in more recent times as ‘the people’s fish’, kahawai is a species that European New Zealanders, until recently, treated with some disdain.

“I don’t eat bait!” was for many years a common call as the kahawai was kept for just that – as a lure to catch more popular recreational species. But like gurnard and trevally, kahawai is seen more commonly on our tables and is less often destined for the bait freezer.
