Smoked Kahawai and Banana Fritters

Ingrediants:

  • 1½ cups smoked kahawai, broken up.
  • 1 large kumara.
  • 1 banana.
  • 1 medium onion.
  • 1 egg.
  • Plain flour.
  • Salt and pepper, to taste.
  • Oil or butter.

Directions:

  • Boil kumara and allow to cool once cooked through.
  • Mash kumara and banana together.
  • Finely chop onion.
  • Mix all ingredients together, including the egg and fish.
  • Add enough flour to bind together.
  • Heat oil or butter in a pan on medium heat.
  • Spoon mixture into pan in fritter-sized amounts.
  • Turn each side once when golden brown.
 

 

Kahawai

Kahawai

Known in more recent times as ‘the people’s fish’, kahawai is a species that European New Zealanders, until recently, treated with some disdain.

“I don’t eat bait!” was for many years a common call as the kahawai was kept for just that – as a lure to catch more popular recreational species. But like gurnard and trevally, kahawai is seen more commonly on our tables and is less often destined for the bait freezer.
