Tomato Herb Kahawai

Ingrediants:

  • 1 fresh kahawai, scaled and steaked.
  • 420-gram tin of tomato soup.
  • 1 or 2 chopped onions.
  • 1 teaspoon mixed herbs.
  • Pepper and salt.
  • Oil.

Directions:

  • Sear steaks on both sides in hot pan.
  • Place in baking dish or frypan; cover with onions, herbs and seasoning.
  • Pour over tomato soup.
  • Bake in oven at 180°C until cooked.
  • Or simmer in frying pan for 20 minutes on medium heat, or till cooked.
 

 

Kahawai

Kahawai

Known in more recent times as ‘the people’s fish’, kahawai is a species that European New Zealanders, until recently, treated with some disdain.

“I don’t eat bait!” was for many years a common call as the kahawai was kept for just that – as a lure to catch more popular recreational species. But like gurnard and trevally, kahawai is seen more commonly on our tables and is less often destined for the bait freezer.
