SpotX Wild Foods Recipe from Donna Davies
Prep:10 minutes Cook:10 minutes Difficulty:1

Ingrediants:

  • 2 limes.
  • 100 grams brown sugar.
  • 100 grams lemon-infused olive oil.
  • Cracked black pepper.
  • Sea salt.

Directions:

  • Juice and zest the limes.
  • Mix zest with sugar.
  • Wet the fish with the lime juice then coat with sugar mix.
  • Brown under a hot grill.
  • Season with sea salt and cracked pepper prior to serving.
  • Great with a green salad.

Blue Cod
Blue Cod Blue cod is to Mainlanders what snapper is to their North Island counterparts.
It is probably the number-one species on their hit lists and this unfortunately has created sustainability issues in the top half of the South Island. Here there are much debated ‘no-take’ and ‘limited-take’ zones in place, along with strict size limits.
Commercially, cod are targeted in ‘pots’ while recreationally, line fishing is the predominant method. If there is a ‘dumb’ fish, it is cod. They have none of the guile or reticence of snapper and will eat just about anything, even bare hooks or ones ‘baited’ with a little bit of shiny cigarette paper. Cod can even be caught on hooks baited with cod.

Blue Cod and Bacon

 

SpotX Wild Foods Recipe from Jeff Glover
Prep:10 minutes Cook:20 minutes Difficulty:1

Ingrediants:

  • 50 grams blue cod fillets.
  • Lemon-pepper fish seasoning.
  • 1 cup plain flour.
  • 3 rashers bacon, chopped finely.
  • 3 large tomatoes, firm and diced.
  • ½ onion.
  • ½ teaspoon of crushed garlic.
  • Basil leaves, roughly shredded.
  • Lemon-infused avocado oil.
  • Sea salt and pepper, to taste.

Directions:

  • Mix flour and lemon-pepper fish seasoning in a plastic bag.
  • Add fish and coat with seasoned flour.
  • Heat avocado oil in frying pan over a medium heat.
  • Cook for 2-3 minutes a side, turning once.
  • Set in warming drawer on hot serving plate.
  • Cook bacon in frying pan until crispy brown.
  • Add onion and cook till soft.
  • Add tomatoes and garlic then cover for 5 minutes.
  • Stir in basil, adding salt and pepper.
  • Leave the lid off the pot and reduce to a sauce.
  • Serve over cod.
  • Garnish with a little chopped coriander and a squeeze of lemon.

SpotX Wild Foods Recipe from Donna Davies
Prep:12 minutes Cook:10 minutes Difficulty:1

Ingrediants:

  • 500 grams fresh cod fillets.
  • 2 tablespoons Asian fish sauce.
  • 2 tablespoons medium white wine.
  • ½ teaspoon freshly-cracked pepper.
  • 1 teaspoon coriander seeds.
  • 1 teaspoon cumin seeds.
  • 1 teaspoon mild chilli paste.
  • 1 teaspoon paprika.
  • 1 clove garlic, chopped finely.
  • Zest and juice of 2 limes or 1 lemon.
  • 2 tablespoons lemon-infused olive oil.
  • 1 teaspoon chopped fresh coriander.

Directions:

  • In a dry pan, roast spices 2-3 minutes until they release their flavour.
  • Cool and grind finely before mixing in chilli or chilli paste.
  • Cut fish into 3cm cubes and coat well.
  • Add garlic, coriander, paprika and lime/lemon juice and zest.
  • Mix well and leave covered overnight in the fridge.
  • Stir occasionally.
  • Heat the olive oil in a heavy frying pan.
  • Sear fish on high heat.
  • Sprinkle with wine and Asian fish sauce while searing.
  • Serve on bed of savoury rice or couscous.

Prep:15 minutes Cook:20 minutes Difficulty:2

Ingrediants:

  • 400 grams blue cod.
  • 3 tablespoons boiling water.
  • 2 teaspoons cornflour.
  • 1 large onion, sliced.
  • 1 large eating apple, sliced.
  • 2 teaspoons curry powder.
  • 1 teaspoon garam masala.
  • 2 tablespoons lemon juice.
  • 3 tablespoons sultanas.
  • 1 banana, sliced.
  • 2 tablespoons sweet fruit chutney.

Directions:

  • Cut cod into bite-sized cubes and dust with cornflour.
  • In a saucepan with boiling water put:.
  • Onion, apple, curry powder, garam masala and lemon juice.
  • Cook until onion and apple have softened.
  • Add a little more water if necessary.
  • Add fish and sultanas; cook gently until fish is nearly cooked.
  • Lastly add banana and chutney for a further couple of minutes.
  • Serve on rice.
