Jumbo in a Basket

Ingrediants:

  • 4 fillets elephant fish, skinned and boned
  • 500 grams sliced bacon rashers
  • 1 large red onion sliced into rings
  • 1 dash soy sauce, or to taste
  • Sea salt and ground pepper, to taste

Directions:

  • Preheat an outdoor barbeque to medium-high heat.
  • Open fish basket, or similar wire cooking basket.
  • Line one side with strips of bacon.
  • Cover the layer of bacon with a layer of onion rings.
  • Season to taste.
  • Place the fish fillets on top of the onion.
  • Cover fish with more onion, then strips of bacon over the onion.
  • Close the basket, and lightly sprinkle or brush with soy sauce.
  • Place the basket on the hot barbeque.
  • Cook for 5-7 minutes per side, or until the bacon is just cooked.
  • Remove from barbeque, and open the basket.
