
| SpotX Wild Foods Recipe from Ravinda Singh Prep:10 minutes Cook:20 minutes Difficulty:2 Ingrediants: - 4 fillets elephant fish, skinned and boned
- 500 grams sliced bacon rashers
- 1 large red onion sliced into rings
- 1 dash soy sauce, or to taste
- Sea salt and ground pepper, to taste
Directions: - Preheat an outdoor barbeque to medium-high heat.
- Open fish basket, or similar wire cooking basket.
- Line one side with strips of bacon.
- Cover the layer of bacon with a layer of onion rings.
- Season to taste.
- Place the fish fillets on top of the onion.
- Cover fish with more onion, then strips of bacon over the onion.
- Close the basket, and lightly sprinkle or brush with soy sauce.
- Place the basket on the hot barbeque.
- Cook for 5-7 minutes per side, or until the bacon is just cooked.
- Remove from barbeque, and open the basket.
