Elephant Fish Cakes

Ingrediants:

  • 1 kilogram of elephant fish fillets
  • 2 large potatoes, boiled and mashed
  • Salt and pepper, to taste
  • 1 tablespoon mixed herbs
  • 1 egg
  • 1 packet ‘seafood coating’ breadcrumbs
  • Olive oil for frying
  • Salt and pepper, to taste
  • Chopped parsley
  • Lime

Directions:

  • Cook and mash potatoes, cool.
  • Steam or microwave elephant fish until just flaky. Allow to cool.
  • Beat egg and mix with potato, fish and mixed herbs.
  • Make into patties and coat in breadcrumbs.
  • Shallow fry each side until browned, turning once.
  • Serve garnished with chopped parsley and a squeeze of lime juice.
